With Fall officially here and football in full swing, Chili is one of those meals that just seems to go with both perfectly. This Texas Chili recipe takes a little time, but the results are completely worth it.

What you need:

2 pounds chuck roast, cubed
1 (28 oz) can diced tomatoes (with or without green chiles)
1-2 fresh roasted green chiles, seeds removed & diced (or a 4 oz can green chiles)*
1-2 c beef broth
1 large onion, diced
3-4 large gloves garlic, minced
2 heaping Tbsp ancho chili powder
2 Tbsp cumin
1 tsp oregano
1 tsp paprika
Salt & Black pepper to taste
2 (15 oz) cans beans, drained (optional)
